BEING REAL AND RAW!

This picture is of Stacey at the Keys having an incredible time with her husband and friends but still enjoying (even as a promoter of raw food) foods of all kind, drink, and friends while maintaining a healthy balance...(most of the time)!
 
So, here is the question we get asked most often:
"How can I go from the majority of my life eating cooked foods, processed foods, meat and dairy, and then try to turn to raw foods tomorrow and succeed on a long term basis?"
 
AND WE SAY, THERE ARE SOME THAT HAVE ACCOMPLISHED RAW OVERNIGHT, BUT MOST THAT DON'T! As for me and my sis we don't choose to either!
 
We feel as though people need to know the truth, the real side of the journey, spoken clearly and honestly that it takes knowledge, it takes perseverance, it takes a strong reason, and it takes dedication. More important than anything, it takes forgiving yourself when you fall short, or we like to call it 'giving ourselves permission to not be so darn perfect'! So, we are here to dispell any myths that it is always easy, that you won't fight cravings, that you won't tire of what you eat every now and again.
 
Although our beginning goal was never to be 100% raw foodists, we did try to maintain a certain level of perfectionism that actually took us in a direction we were not expecting.
That direction being that we had to try to bury cravings we had for some foods that we had grown up eating our whole lives! This, in turn meant not enjoying ourselves to our fullest potential and each meal turned into a 'should do' instead of a 'want to'....which led to feelings of guilt if anything passed our mouths that was not on the approved 'RAW LIST':), most important, it meant not living up to be our true selves....when we discovered this was when we morphed into what was best for us....not anyone else...just us! Ahhh, the relief of that alone is completely freeing!
Yes, there are people who can turn to be 100% raw overnight, but the longer you stick around and read the personal journeys of many top raw foodists, the videos, their interviews, you will begin to realize that a little balance of cooked food in the diet is key!
 
Yes, all aspects of raw eating are very beneficial...
 
HOWEVER, what we are hoping we can save you from is the self-loathing if you get off track and that it is ok if you do, and more than that, it is normal, and even more than that it is ULTRA HEALTHY...for your body and your mind!
 
YOU DO NOT HAVE TO BE 100% RAW to be successful, to be radiant, or to be healthy!
 
IN FACT, WE DO NOT RECOMMEND IT, WE RECOMMEND JOY AND BALANCE!
 
Furthermore, we don't even recommend you put a percentage on it at all...you are what you are...you eat the best you can as often as you can, that's it!
 
Creating, achieving and sustaining balance in your life will make you far healthier
than pushing, trying, or even coaxing yourself into any un-natural pattern of living.
The KEY is to allow yourself permission to take this journey slowly.
Do not over commit to yourself or to anyone else for that matter. Who are you trying to please? Hopefully, it's you first.
The other day we were talking with another raw foodist privately and we got to talking about what the art of really living is?
 
And, the final conclusion was certainly not living in denial of the things you really do love, but to 
live a life which is supposed to be LIVED, really LIVED and tasted and enjoyed!
And yes, that boils down to eating healthy, because we do strongly believe that food is thy medicine but its only a part of the equation!
You will want to live guilt free (women are hard enough on themselves), you will want to read books that enlighten your world, travel to broaden your persepctive, love somebody unconditionally or many, hold on to and cherish your friendships, AND..have new food experiences, as in sometimes when your in Rome..do as the Romans do! Is a piece of crusty bread in Italy going to squelch your success? Is a glass or two of wine going to throw your life into a tail spin? How about a dessert made with love? God forbid we should eat that! :)
Anyway, you get the picture, right? ALL BALANCE!
 
Honesty with yourself will take you to levels you have never known before and
you know what we are talking about if you ever went out the gates strong saying that you were going to do this or do that only to find yourself more disappointed than when
you began.
We are only speaking from experience here and we have talked to more people on
a personal level, behind the scenes, that have said enough is enough of a) trying to be something you are not or b) trying to live up to someone elses standards!
 
So, what are your standards?
 
Will a cup of black coffee throw your body into sickness? No.
Now on the other hand, a pot of coffee daily?? Not good...Is it acidic to the body? Yes.
Moderation is key...but a cup of warm coffee on a cold winter day might just do more to soothe your soul than denying yourself a little piece of sanity in a sometimes crazy world! :)
 
Our personal recommendation would be to discover and enjoy the taste of everything raw but do so by moving freely towards it, not through force!

Enjoy your life, seize the day and follow YOUR bliss!
 
Remember, as women when we deny ourselves something often we want it even more....and your cravings come back even stronger....
you have the world at your fingertips but only you know what makes your heart sing...live that life!

Raw 'Jalapeno Corn Chips'

If there is one thing, (and there is definitely more than one thing), that we crave and miss from the Standard American Diet it is the look, texture, and process of dipping a chip into a dip! Well, if this is you, look no further, don't these look unbelievably de-licious!???? Yummy! Just read below, prepare a batch or two and grab a bowl of these Jalapeno Corn Chips along with a side of guacamole or salsa and have a wonderful time doing so!

Ok...one great thing about the raw food world is that you meet some pretty neat people along the way! We attended an un-cooking class and while we were there we were table-mates with Penni Shelton from Real Food Tulsa, and it just so happens that this weekend while we were on a search for a recipe for a "chip fix" for two of our clients who just can't see themselves giving this snack up- we came across this recipe which Penni has promoted for some time now which, if we have this all correct she learned from Sarma Melngailis', (see Sarma's book cover below)  Raw Food Real World. jalapeño corn tortilla chips
3 cups fresh corn, from about 3 ears (or use frozen, thawed sweet corn)
1 1/2 cup red or orange bell pepper
1/2 cup onion
3/4 cup flax seeds
1/2 cup hemp seeds, optional
1 tbs fresh lime juice
1 – 2 jalapenos, seeds removed
1/2 tsp chili powder
2 tsp cumin
2 tsp sea salt

  1. In a food processor, chop the corn, bell pepper, and onion until smooth. Add the remaining ingredients and process until just combined.
  2. Using an offset spatula, spread the dough thinly onto three 14 inch Teflex lined dehydrator trays. Dehydrate at 115 degrees for 6 – 8 hours, or overnight. Flip the sheets over onto the tray and carefully peel away the liners. Break or cut w/ a pizza cutter into chip shapes. Place back in the dehydrator for 4 – 6 hours, or until crisp. Store in an airtight container for a week or two.

***The secret to my chips and crackers is the use of an off-set spatula. In my opinion, there is no better tool to insure the flattest, smoothest and most perfectly spread batter on a Teflex sheet.

Where You Can Get A Happy Meat & Egg Free Breakfast- Eggtc!

It's not too often you see those of us in the Raw Food business blog about a breakfast place called Eggtc...but this place is an exception!

First off, many of you know we are huge fans of fruit only before noon, and most mornings we do live by the sound of a blender making up our flavor of the day for our infamous green smoothie! However, we don't live in a cookie cutter world of a schedule of perfection (thank God), so, out of the 6 days a week my sister and I get together each morning to work, once a week Stace and I are on the move to search out a great breakfast spot to have our weekly business talk where we can actually find something to eat other than eggs, bacon, and fried potatoes! Don't get us wrong, this place serves up that and much more of the most delicious foods on the Standard American Diet (so we see and hear) but find out as you read below why this place below is our favorite local breakfast hangout here in Kansas City now and why we both drive 35-40 minutes to get here!

Hands down, one simple reason, THE STAFF WHO ACCOMODATES OUR UNIQUE MEAT, EGG, AND CHEESE FREE REQUESTS! When most restaurant chefs, cooks, owners, and bartenders might find us a bit of a 'pain in the neck', Eggtc makes us feel like the norm! So, on this one day of every week instead of having our one cooked meal in the evening hours as usual, we joyously get to indulge in an all veggie wrap. You say well how unique is that? Here's what ya gotta understand, this place serves divine food, and when you first order up and you place the order and we then follow up with "No thank you on the eggs, and then they ask what type of cheese would you like, and we say "Oh no thank you on the cheese, and then "fried potaoes or fruit?" and we say "Oh no thank you on the potatoes or the fruit" - we just visualize what they must be thinking...like I hope I never get these two in my section again! But quite the contrary, when we walk in Roxanne (the top waitress in KC, if you ask our opinion) has requested we sit in her section....(Here I am with Roxanne, who we have become friends with through the restaurant.)

Thank you everyone at Eggtc that makes our meat free, egg free, and cheese free journey a whole lot smoother! You've got to give this place a try, located on 51st and Main in Kansas City Missouri, right in between Brookside and the Plaza- and Oh yeah, ask for Roxanne (if you choose to sit at a table or Julie at the breakfast bar and say you want what the twins have, might take them a second to refresh their memory, but in moments (if you choose to eat a cooked meal) you will be eating the most delicious gently cooked avocado, spinach, tomato, onion, sometimes asparagus mixture (olives for Stace) with a side of this tasty salsa all prepared by the happy and accomodating chefs!

Mock Pumpkin Pie Recipe

We are so excited to pass along this recipe for Mock Pumpkin Pie because we, without a doubt, know you will be as in love with this dessert as we are! Stacey and I went to an un-cooking class 2 weekends ago that was given by, none other than Rachel Fracassa, (Lemons In The Kitchen) who shared this recipe from Living Light Culinary Institute.  This un-cooking class was all about preparing all the typical Thanksgiving dishes, except these were being taught the raw and healthy way! :) From stuffing, to green beans almondine, to cranberry sauce, and waldorf salad, as completley delicious as they all were...this pie was our absolute favorite!

All that we need to tell you is to go to your kitchen and make this recipe! It looks like pumpkin pie, tastes like pumpkin pie, and has the texture of pumpkin pie! Need we say more! ENJOY!

MOCK PUMPKIN PIE (Makes one 9-inch pie)

(Our personal side notes that we took during class are highlighted in pink/brown)

Crust:

2 1/2 cups pecans, soaked and dehydrated (can also use walnuts)

1/4 teaspoon sea salt

1/4 cup raisins, soaked (they blend better when soaked)

3 tablespoons Rapadura

1/2 teaspoon cinnamon


Filling

3/4 cup water

2 carrots, chopped (must =about 1/2 cups) (Peel carrots first)

1 avocado, mashed

3/4 cup Rapadura

1/4 cup agave

1/4 teaspoon sea salt

2 teaspoons lemon juice (takes away the carrot flavor)

2 teaspoons pumpkin pie spice

1 cup water

1 tablespoon ground agar (a thickening agent that requires heating in this recipe)

HOW TO MAKE THE CRUST:

Place all the ingredients in a food processor fitted with the S blade and process until the mixture resembles coarse crumbs and begins to stick together. Scoop the crust into a pie plate. Use a light circular motion with your palm and fingers to distribute the crumbs uniformly along the bottom and up the sides of the pan. Press the crust firmly into the pie plate.

HOW TO MAKE THE FILLING:

Place 3/4 cup of the water and the carrots in a Vita Mix or high speed blender and blend until smooth. Add the avocado, Rapadura, agave, sea salt, lemon juice, and pumpkin pie spice and blend until very smooth. Place the remaining 1 cup of water in a small saucepan and add the agar. Bring to a boil, stirring occassionally, and simmer for 2 minutes. Turn off the heat and allow the dissolved agar mixture to cool. Add the agar mixture to the Vita Mix and blend. Pour the filling into the crust. Chill the pie for at least 2 hours before serving. Covered with plastic wrap, Mock Pumpkin Pie will keep for 5 days.

Tis The Season For Lattes! (You've Got To Try this Alternative)

Well, it's almost here! Thanksgiving for us (here in the United States) is just 3 glorious days away, Christmas music is officially playing, the grocery shopping has begun, and this week is the time where family and friends begin to arrive! This is our absolute favorite time of year! However, there is almost more merriment to indulge in than one healthy body can take, from chips and dips, trays of cookies, cakes, truffles, and not to mention the addictive desire for a 'comfort' latte! Well, no worries with most of our clients still looking for ways to transition off of coffee and especially dairy lattes, we're coming to you today with a yummy latte alternative because being the transition queens that we are, we are always about finding do-able, real-life alternatives, so that you can still live your life through the holidays all while still looking and feeling your best! So, with all the corner and mall coffee shops beckoning your business to stop in for just one tall piping hot white chocolate mocha... try this solution: A Rice Milk Latte! This coffee drink that you will view here is iced, but simply ask for it to be warmed at a a low temperature and you will be incredibly satisfied! Click here to view us at our local coffee shop (Scooters, owned by Angie Lickliter, who we are interviewing) who has done our community a huge favor by accomodating all those of us that live a dairy free lifestyle that every now and again, crave a latte! PS~ If your local coffee shops don't offer rice, almond, or hemp, as an alternative, just bring your own rice, almond, or hemp milk in a thermos...and they will be most accomodating!

Craving Something Other Than Salad? Here's A Mock Tuna Fish Recipe For You!

 
We attended Rachel Fracassas (From Lemons In The Kitchen) un-cooking class this past week and we learned so many great tricks of the trade on how to prepare dishes for Thanksgiving! Rachel is amazing! After leaving with so many great recipes from her we browsed her site and found a recipe for tuna fish salad! Although this is recipe has been altered a touch we for sure wanted to pass along the credit to Rachel for even sharing the base of this recipe...so the credit is definitely to her! This recipe of Mock Tuna is so worth adding to your recipe file. The base is almonds and sunflower seeds and the amazing seafood taste comes from using kelp granules. So delicious! You could add vegan mayo, it would be a great addition to this recipe! ENJOY!
